A Salad a Day Keeps The Inches at Bay

Why kale? What gives this sudden kale craze credibility?

Besides the diversity of uses in the kitchen, its nutritional value tops the charts when it comes to leafy greens. We as people are starting to become more aware of how processed every day foods are and are quickly adopting healthier alternatives.

While lettuce for a salad is somewhere around 90% water and provides almost zero value with the exception of hydration, kale is a low-calorie, fiber rich, antioxidants power punch that detox’s you and leaves you feeling healthier than before.

Kale is rich in Vitamin’s K, A, and C which means it helps lift your mood and ease muscle stiffness. It’s natural anti-inflammatory properties help fight against arthritis, asthma, and autoimmune disorders.

If these weren’t reasons enough to eat as much kale as you can get your hands on – kale has more calcium than a glass of milk, with zero fat. Forget that milk and grab a glass of kale juice instead. Or scarf down a can of it, Popeye-style.

Here is a delicious salad recipe that will detox your body and give you your dose of fruits of and veggies for the day.

And yup, you guessed it, we used kale instead of lettuce or spinach (we love spinach too though).

Ingredients
1/4 cup rice vinegar
1 tablespoon orange juice
1 teaspoon Dijon mustard
1 teaspoon grated orange zest
1 teaspoon ground cumin
1/4 teaspoon red pepper flakes
1/3 cup olive oil
salt and ground black pepper to taste
1 bunch kale
1 persimmon, sliced
1 apple, cut into matchsticks
2 orange, peeled and cut into segments
1/4 cup chopped pistachio nuts
Whisk vinegar, orange juice, Dijon mustard, orange zest, cumin, and red pepper flakes together in a bowl. Slowly pour olive oil into the orange juice mixture, whisking until thick and thoroughly combined.

Season dressing with salt and black pepper.

Remove stems from each leaf of kale. Stack 3 to 4 leaves of kale and roll together. Finely slice kale leaves crosswise to create thin ribbons.

Combine sliced kale, persimmon, apple, orange, and pistachio nuts in a bowl. Add dressing and toss until well coated.

Throw all that into serving dishes and chow down! This salad is fresh, easy to make, and is healthier than your every day meal.

Sounds like a sweet deal. It’s no wonder why kale is being referred to as ‘the new beef.’
